When we go to Chinese restaurants with white people, waiters always ask whether we want them to cook in the "gwei-lo style" or "chinese style". No kidding-- they prepare the same dish differently depending on what they assume your taste will be. So if you want authentic, as a white person you actually have to emphasize that you want your food cooked "Chinese-style, not American-style".
